Ingredients

Prices are from Kroger the week of October 11, 2026. Sale prices change every week and differ by store.

Steps

  1. Cut potatoes into 1/2 inch pieces. Heat oil in a 10 inch skillet over medium heat and cook potatoes with a pinch of salt for 12 to 15 minutes until tender and golden.
  2. Whisk eggs with 1/4 teaspoon salt and pepper in a bowl. Shred the cheddar and stir into the eggs along with the spinach littles.
  3. Pour the egg mixture over the potatoes in the skillet, reduce heat to medium low, and cook without stirring for 8 to 10 minutes until the edges set but the center still jiggles slightly.
  4. Broil the skillet 3 to 4 minutes until the top is set and lightly browned. Let cool 2 minutes before slicing into wedges.

Why it’s cheap

4 of the 7 ingredients were on sale at Kroger the week of October 11, 2026, led by large eggs at $5.49 instead of $6.79.

The sale items rang up $8.80 under their regular prices.

Penny Meals prices a dinner by the share of each package you actually cook, adds an estimated shelf price for anything that wasn’t on sale, and counts pantry staples like oil and salt as free. That came to $2.01 a serving, or $8.04 for 4 servings.
