Ingredients

Prices are from Kroger the week of October 18, 2026. Sale prices change every week and differ by store.

Steps

  1. Preheat oven to 400 degrees. Thaw spinach and squeeze out excess moisture.
  2. Whisk eggs with salt and pepper. Heat butter in a 10-inch oven-safe skillet over medium heat. Add onion and cook until soft, 2 minutes.
  3. Add spinach and stir, then pour in eggs. Cook on the stovetop for 2 minutes without stirring, then sprinkle cheese over the top.
  4. Transfer to oven and bake until set and lightly golden on top, about 12 to 15 minutes. Let cool 2 minutes before slicing.

Why it’s cheap

3 of the 7 ingredients were on sale at Kroger the week of October 18, 2026, led by large eggs at $5.49 instead of $6.79.

The sale items rang up $2.59 under their regular prices.

Penny Meals prices a dinner by the share of each package you actually cook, adds an estimated shelf price for anything that wasn’t on sale, and counts pantry staples like oil and salt as free. That came to $1.22 a serving, or $4.88 for 4 servings.
