Steps
- Heat oil in a large skillet over medium heat, add diced onion and cook until softened, about 4 minutes.
- Stir in garlic, cumin, and the tomatoes with green chilies, then simmer for 5 minutes.
- Add the shredded chicken and half the tortilla chips, toss to combine, and cook for 3 minutes.
- Top with remaining chips and the cheese, cover, and cook until cheese melts, about 2 to 3 minutes.
- Serve with a dollop of sour cream if desired.
