Ingredients

Prices are from Publix the week of October 18, 2026. Sale prices change every week and differ by store.

Steps

  1. Cut squash into 1-inch cubes, toss with 1 tbsp oil, salt, and pepper, spread on a sheet pan and roast at 400 degrees for 20 minutes.
  2. Pat chicken breasts dry and season both sides with garlic powder, salt, and pepper.
  3. Heat remaining 2 tbsp oil in a large skillet over medium-high heat, add chicken and cook 6 to 7 minutes per side until golden and cooked through.
  4. Remove chicken to a plate, add spinach to the skillet with a splash of water, stir until wilted about 2 minutes.
  5. Divide squash, chicken, and spinach among plates.

Why it’s cheap

3 of the 7 ingredients were on sale at Publix the week of October 18, 2026, led by boneless skinless chicken breasts at $2.78 instead of $5.55.

The sale items rang up $6.47 under their regular prices.

Penny Meals prices a dinner by the share of each package you actually cook, adds an estimated shelf price for anything that wasn’t on sale, and counts pantry staples like oil and salt as free. That came to $0.86 a serving, or $3.44 for 4 servings.
