Prices are from Publix the week of October 11, 2026. Sale prices change every week and differ by store.
Steps
- Heat 1 tablespoon oil in a large skillet over medium heat. Add diced onion and minced garlic, cook until softened, about 5 minutes.
- Stir in cumin and paprika, cook 1 minute until fragrant. Add canned tomatoes with their juice. Simmer for 10 minutes, breaking up tomatoes slightly. Season with salt and pepper.
- In a separate skillet, heat 2 tablespoons oil over medium-high heat. Add spinach in batches, stirring until wilted, about 5 minutes total. Season with salt and pepper.
- Divide wilted spinach among 4 shallow bowls. Make a small well in the center of each mound.
- Reduce tomato sauce heat to medium-low. Carefully crack 2 eggs into each bowl, nestled on the spinach. Pour the warm tomato sauce around the eggs, then cover and cook for 5 to 7 minutes until whites are set but yolks remain runny.
- Toast bread slices and serve alongside bowls for dipping in the sauce.
