Ingredients

Prices are from Whole Foods the week of October 11, 2026. Sale prices change every week and differ by store.

Steps

  1. Cut the potatoes into bite-sized chunks and dice the onion and garlic.
  2. Heat 2 tablespoons of olive oil in a large skillet over medium-high heat and add the potatoes, stirring occasionally until golden and tender, about 15 minutes.
  3. Roughly chop the kale and push the cooked potatoes to the side of the skillet, then add the remaining olive oil and cook the onion and garlic for 2 minutes until fragrant.
  4. Add the kale to the skillet and stir until it begins to wilt, about 2 to 3 minutes.
  5. Make 8 small wells in the potato and kale mixture and crack an egg into each well, then reduce heat to medium-low, cover loosely with a lid or foil, and cook for 5 to 6 minutes until the eggs are set to your liking.
  6. Season with salt and pepper and serve directly from the skillet.

Penny Meals prices a dinner by the share of each package you actually cook, adds an estimated shelf price for anything that wasn’t on sale, and counts pantry staples like oil and salt as free. That came to $1.98 a serving, or $7.92 for 4 servings.
