Ingredients

Prices are from Publix the week of October 18, 2026. Sale prices change every week and differ by store.

Steps

  1. Heat 2 tablespoons oil in a 10-inch skillet over medium-high heat.
  2. Slice the mini peppers into rings and add to the hot pan, cooking until they start to soften, about 3 minutes.
  3. Add the spinach and cook, stirring, until wilted, about 2 minutes.
  4. Whisk the 8 eggs together with salt and pepper, then pour over the peppers and spinach.
  5. Sprinkle the shredded cheese evenly over the top and let the skillet sit undisturbed for 2 to 3 minutes to allow the bottom to set.
  6. Once the edges begin to set but the center still looks wet, place the skillet under the broiler for 3 to 4 minutes until the top is golden and set.
  7. Slide the frittata onto a cutting board, cut into wedges, and serve with toasted bread.

Why it’s cheap

5 of the 8 ingredients were on sale at Publix the week of October 18, 2026, led by vital farms organic brown eggs, large at $5.65 instead of $11.29.

The sale items rang up $13.94 under their regular prices.

Penny Meals prices a dinner by the share of each package you actually cook, adds an estimated shelf price for anything that wasn’t on sale, and counts pantry staples like oil and salt as free. That came to $2.35 a serving, or $9.40 for 4 servings.
