Ingredients

Prices are from Publix the week of October 11, 2026. Sale prices change every week and differ by store.

Steps

  1. Preheat oven to 400°F. Cut squash in half, scoop out seeds, place cut side down on a baking sheet, and roast for 25 minutes until tender.
  2. Scoop roasted squash from skin and cut into bite sized pieces.
  3. While squash roasts, heat a 10 inch cast iron or oven safe skillet over medium heat, add Country Crock, and sauté spinach until wilted, about 2 minutes. Remove to a plate.
  4. Whisk eggs with salt, pepper, and nutmeg in a bowl. Pour into the same skillet over medium heat, let set for 2 minutes, then gently stir. When mostly set but still a bit wet on top, scatter squash, spinach, and cheese over the surface.
  5. Transfer skillet to oven and bake for 8 to 10 minutes until the top is just set and lightly golden.
  6. Slice into four wedges and serve.
