1.5 lb Mahi mahi fillets

Steps
- Preheat oven to 425 degrees. Toss hash browns and broccoli with 2 tbsp olive oil, salt and pepper. Spread on a baking sheet and roast for 15 minutes.
- Pat mahi mahi dry and season both sides with salt and pepper. Heat 1 tbsp olive oil in a large skillet over medium-high heat until shimmering.
- Place fillets in the skillet and cook without moving for 4 minutes until golden, then flip and cook 3 to 4 minutes more until cooked through.
- Squeeze lemon over the fish. Serve with the roasted potatoes and broccoli.
