Ingredients

Prices are from Publix the week of October 11, 2026. Sale prices change every week and differ by store.

Steps

  1. Cut squash in half, scoop seeds, brush with oil, and roast cut side down at 400 degrees for 25 minutes until golden.
  2. Pat pork dry and season with salt, pepper, and half the garlic powder.
  3. Heat 1 tablespoon oil in a skillet over medium-high heat and sear pork 4 to 5 minutes per side until golden, then rest.
  4. In the same skillet, add remaining oil and wilt spinach with remaining garlic powder for 2 minutes, stirring.
  5. Slice pork and serve with roasted squash and spinach.

Why it’s cheap

4 of the 7 ingredients were on sale at Publix the week of October 11, 2026, led by pork loin tenderloin at $3.50 instead of $6.99.

The sale items rang up $8.28 under their regular prices.

Penny Meals prices a dinner by the share of each package you actually cook, adds an estimated shelf price for anything that wasn’t on sale, and counts pantry staples like oil and salt as free. That came to $1.68 a serving, or $6.72 for 4 servings.
