Ingredients

Prices are from Publix the week of October 18, 2026. Sale prices change every week and differ by store.

Steps

  1. Preheat oven to 400°F. Peel and cut the squash into 1 inch cubes. Trim the pork and pat dry.
  2. Toss squash with 2 tablespoons oil, salt, and pepper. Spread on one side of a large sheet pan and roast for 15 minutes.
  3. Season the pork with salt, pepper, and garlic powder. Push squash to the sides and place the pork in the center. Add green beans tossed with the remaining oil around the pork.
  4. Roast everything together for 15 to 20 minutes, until the pork reaches 145°F and the vegetables are tender. Rest the pork for 5 minutes before slicing.
