Ingredients

Prices are from Publix the week of October 11, 2026. Sale prices change every week and differ by store.

Steps

  1. Bring broth to a boil in a small pot, then stir in couscous and remove from heat. Cover and let sit until tender, about 8 minutes.
  2. Pat pork tenderloin dry and season with salt, pepper, and garlic powder. Heat oil in a large skillet over medium-high heat.
  3. Sear the pork for 4 to 5 minutes per side until browned. Transfer to a cutting board and let rest 5 minutes, then slice into half-inch pieces.
  4. Add mini peppers to the hot skillet and cook for 4 to 5 minutes, stirring occasionally, until charred and tender. Return pork to the pan to warm through, then serve over couscous.

Why it’s cheap

4 of the 8 ingredients were on sale at Publix the week of October 11, 2026, led by publix boneless pork loin tenderloin at $3.50 instead of $6.99.

The sale items rang up $10.05 under their regular prices.

Penny Meals prices a dinner by the share of each package you actually cook, adds an estimated shelf price for anything that wasn’t on sale, and counts pantry staples like oil and salt as free. That came to $1.45 a serving, or $5.80 for 4 servings.
