Ingredients

Prices are from Publix the week of October 4, 2026. Sale prices change every week and differ by store.

Steps

  1. Preheat oven to 400 degrees F. Cut acorn squash in half lengthwise, scoop out seeds, and place cut-side down on a baking sheet. Roast for 20 minutes.
  2. While squash starts, heat oil in a large skillet over medium-high heat. Season ribs with salt and pepper. Brown them in batches, 3 to 4 minutes per side. Set aside.
  3. Pour broth into the skillet, scraping up browned bits. Return ribs to the pan. Reduce heat to low, cover, and simmer for 35 to 40 minutes until pork is very tender.
  4. Turn acorn squash cut-side up. Scatter frozen peas over the pork ribs in the final 5 minutes of cooking time, and finish roasting the squash.
  5. Plate each squash half with a rib and broth spooned over top, scattered with peas.

Why it’s cheap

3 of the 7 ingredients were on sale at Publix the week of October 4, 2026, led by pork shoulder country-style ribs, bone-in at $2.25 instead of $4.49.

The sale items rang up $4.93 under their regular prices.

Penny Meals prices a dinner by the share of each package you actually cook, adds an estimated shelf price for anything that wasn’t on sale, and counts pantry staples like oil and salt as free. That came to $1.27 a serving, or $5.08 for 4 servings.
