Ingredients

Prices are from ALDI the week of October 11, 2026. Sale prices change every week and differ by store.

Steps

  1. Heat olive oil in a large skillet over medium-high heat. Add the rice pilaf mix and toast for 2 minutes, stirring frequently.
  2. Pour in the vegetable broth and bring to a boil. Stir in the lentils, then reduce heat to low and cover.
  3. Simmer for 15 minutes until the lentils and rice are nearly tender.
  4. Stir in the corn and green beans with their liquid. Simmer uncovered for 2 to 3 minutes until heated through. Season with salt and pepper before serving.

Why it’s cheap

3 of the 8 ingredients were on sale at ALDI the week of October 11, 2026, led by earthly grains long grain rice pilaf with orzo and onion mix at $0.89 instead of $0.99.

Penny Meals prices a dinner by the share of each package you actually cook, adds an estimated shelf price for anything that wasn’t on sale, and counts pantry staples like oil and salt as free. That came to $0.95 a serving, or $3.80 for 4 servings.
