Ingredients

Prices are from Publix the week of October 4, 2026. Sale prices change every week and differ by store.

Steps

  1. Preheat oven to 400F. Cut butternut squash into 1 inch cubes, toss with 2 tablespoons olive oil, salt and pepper, spread on a sheet pan and roast 25 minutes until golden and tender.
  2. Bring a large pot of salted water to boil and cook penne until al dente, about 10 minutes. Reserve 1 cup pasta water before draining.
  3. Mince garlic and heat remaining 1 tablespoon oil in a large skillet over medium heat. Cook garlic until fragrant, about 1 minute.
  4. Add roasted squash to skillet and break into smaller pieces with a wooden spoon. Add 1/2 cup pasta water and simmer 2 to 3 minutes to create a light sauce.
  5. Toss cooked pasta with squash mixture, crumbled gorgonzola, and more pasta water as needed to loosen. Season with salt and pepper and serve immediately.

Why it’s cheap

2 of the 8 ingredients were on sale at Publix the week of October 4, 2026, led by butternut squash at $0.99 instead of $1.99.

The sale items rang up $3.22 under their regular prices.

Penny Meals prices a dinner by the share of each package you actually cook, adds an estimated shelf price for anything that wasn’t on sale, and counts pantry staples like oil and salt as free. That came to $1.22 a serving, or $4.88 for 4 servings.
