Ingredients

Prices are from Publix the week of October 11, 2026. Sale prices change every week and differ by store.

Steps

  1. Peel and cut the butternut squash into 1/2 inch cubes. Toss with 1 tbsp olive oil, cumin, chili powder, and salt.
  2. Spread on a baking sheet and roast at 425F for 18 to 20 minutes until edges are golden and tender.
  3. While squash roasts, heat the remaining 1 tbsp oil in a skillet over medium heat. Pour in the baked beans with their liquid and stir, breaking up some beans with the back of a spoon, until warmed through, about 5 minutes.
  4. Warm tortillas in a dry skillet for 30 seconds per side. Stack on a plate.
  5. Assemble tacos by spreading beans on each tortilla, topping with roasted squash and a spoonful of salsa.
  6. Serve with lime wedges and extra salsa on the side.

Why it’s cheap

4 of the 10 ingredients were on sale at Publix the week of October 11, 2026, led by butternut squash at $0.99 instead of $1.99.

The sale items rang up $6.93 under their regular prices.

Penny Meals prices a dinner by the share of each package you actually cook, adds an estimated shelf price for anything that wasn’t on sale, and counts pantry staples like oil and salt as free. That came to $1.18 a serving, or $4.72 for 4 servings.
